Jean’s Toddler Tofu

One of my favorite ways to eat tofu is easy to make and has been “toddler tested”. I have made this for my nephew, and the cook at my previous school used to make this for the toddler classrooms. It always disappears. Even though the soybeans are not from the area, the tofu is made in Eugene, OR. I am still waiting to hear back about where the closest legumes and grains can be found, so until then I have had to find ways to still get protein in my diet.

The best part of this recipe is that it contains three ingredients: Surata extra-firm tofu, wheat-free soy sauce and nutritional yeast.

1. Begin by heating a thin layer of olive oil in a frying pan on medium low heat.

2. Cut up the tofu into squares about 3/4 inches thick.

3. Slowly brown the tofu in the frying pan, gently turning the tofu over when one side is browned.

4.  Once both sides are brown, lower the heat and add soy sauce to taste (approx. 2-3 TBS)

5. Then sprinkle nutritional yeast on one side of the tofu and turn it. Sprinkle it on the other side and turn.

6. Serve and enjoy!

Serves 2-3 people for a small package of tofu and 4 people with a large package
